We recently started a workout challenge at a local gym and we found out how bad we are with protein and breakfast in general. One suggestion was Egg Muffins and they did not disappoint! I found this recipe and gave it a shot and breakfast has been soo much easier. The protein you get from this quick bite is such a good idea! I did change the recipe a little bit and add some green onions and a little bit of broccoli as well, so feel free to add or take away things. Below is the original recipe I found.
Prep Time: 5 minutes Cook Time: 20 minutes Makes: 12 muffins
Ingredients you need to cook this shit:
- 10 large Eggs
- 1/3 cup Milk
- 1 cup Cheddar Cheese
- 6 oz. bacon (I used Canadian bacon for mine in the photograph)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 TBSP fresh minced chives
Directions you need to cook this shit:

Preheat oven to 375 degrees. Cook your bacon.

In a large glass mixing bowl, combine eggs and milk and whisk well.

Stir in 3/4 cup cheese, cooked bacon, salt, and pepper.

Divide mixture evenly among 12 greased muffin cups.

Sprinkle with remaining 1/4 cup cheese and fresh chives.

Bake at 375 degrees for 20 minutes or until centers are set and muffins are beginning to brown.
